Giant Fluffy Cupcake anyone???

My friend asked me to make her daughter's birthday cake...

which was fine considering it is her pan, cake, sprinkles etc.

I decided a giant cupcake like this deserved some seriously fluffy frosting...doesn't it look enticing? trust me... my "taste-testers" were standing by...

recipe:

7 minute frosting

3 egg whites

1 Tbsp corn syrup

3/4 c. + 2 Tbsp. sugar

combine 3/4 c. sugar, corn syrup and 2 Tbsp water in small saucepan over medium heat dissolve sugar mixture until you feel no more grainy bits between your fingers. Bring to boil until it reaches 230 on candy thermometer.

meanwhile beat egg white to soft peaks...gradually add 2 Tbsp sugar.

with mixer on medium speed add hot sugar mixture to egg whites... increase speed and whip mixture 7 minutes or until mix is cooled, glossy and fluffy.

  5. Mmmm Jenny! That looks AMAZING! I don't think I have ever tried a frosting like that. Are those the Necco candies for the giant sprinkles? I wish I had been invited to that party!

    And Edamame's ARE super yummy. They sell them everywhere here. If only I could get Sean to eat them.

  6. I love this Cupcake mold. Every time I go to Michaels with a coupon I seriously consider buying it to make super fun and cute treats. Maybe Lydia's Birthday will be a great reason to splurge.
