spring udate

I never did post about our fun valentines dinner.  Lisa inspired me to decorate our table with pictures of my loved ones....  I loved decorating and surprising my family with these...





Sadie and I got to go see SHREK the musical and spent a fun afternoon shopping at City Creek... good times!



Nick celebrated his 9th birthday... got a fish and won the pinewood derby with his creative PIZZA CAR!  The funnest birthday spent with grandparents and friends.



What would a post be without a yummy treat... here you are, my easter cookies that were quite yummmo!!!
 And our easter weekend spent gathering eggs, smiles, laughs, dirt, sun rays, and good ol spring time fun!


Not one nice Church Clothes Easter Picture to behold... sorry... I seem to forget the important stuff these days... oh well!  Imagine us all dressed up and looking pretty!  :)

Nick's game room.





That's CREATIVE Nick for you... Here is his idea of fun... and by the end of the day we all had ourselves a round of "finger football" and won a terrific prize.  I got to choose from a square of bubble wrap (who couldn't use some good bubble popping now and then) and some tic tacs!

I bet you wish you could have played a game or two!  HEHE!

ice fishing

 We have a new family favorite outing... ICE FISHING... and a new favorite spot for it... HYRUM RES>

Bunco Night Treats... here are the recipes I promised.

Turkey Delux Club Pizza
**1 loaf rhodes bread dough
2 tsp sesame seeds
1/4 c mayonnaise
1 tsp lemon zest
1/4 c. pesto
1 c. shredded jack cheese
6 slices deli turkey cut into strips
6 strips bacon, cooked and crumbled
2 tomatoes sliced thinly
1/2 c. fresh mushrooms sliced
1/2 c. shredded swiss cheese

roll dough into 12x15 rectangle.  prick dough with fork, sprinkle dough with sesame seeds.  bake in a 425 oven for 10-12 minutes.  remove from oven and spread with mayo and pesto.  sprinkle on jack cheese, turkey, bacon, mushrooms, and tomatoes.  sprinkle swiss cheese on top and top with lemon zest and more pesto (if desired)  return to oven and cook for 7-10 min more.

(pizza can be grilled.  roll dough out as above and brush with olive oil, lay directly on the grill, brown on one side and flip over.  top with ingredients and close lid while cheese melts and crust continues to cook.)

**I made my own crust in my bread machine.  Here's the recipe:

Bread Machine French Bread Dough
1 1/8 c. water
3 c. flour
1 Tbsp sugar
1 tsp Salt
1 Tbsp oil
1 Tbsp honey
1 1/2 tsp yeast
put all ingredients in bread machine and set to dough setting (mine is the first rise setting and takes 1 hr. 40 min)  pull out and roll into full size cookie sheet for pizza.  or makes 2 loaves of fabulous french bread.
bake at 400 for 10 min and add toppings or 30 min for french bread.

Strawberry Spinach Salad
1/4 c. sugar
1 quart fresh strawberries sliced
1 package baby spinach
1 c. sliced almonds
1 recipe honey celery seed dressing

honey celery seed dressing
3/4 c. sugar
1/2 c. honey
1 tsp paprika
1 tsp djon mustard
1 tsp finely grated onion
1/2 c. fresh lemon juice
1 c. veg. oil
1/2 tsp celery seeds

mix all ingredients except oil and celery seeds in blender.  gradually add oil and celery seed and continue blending.  toss with strawberry spinach salad or pass for individual servings.  refrigerate remaining dressing for latter use.  keeps 3 weeks. (*this really maked a lot... )

meringues
6 egg whites
1/2 tsp cream of tartar
1/4 tsp salt
1 3/4 c. sugar

heat oven 200.  beat egg whites and cream of tatar until frothy.  add salt.  gradually add sugar.  beat until stiff and glossy about 15 minutes scrapping down sides of the bowl frequently.  pipe or spoon onto parchment lined baking pans into desired shapes.  hearts, disc, large round circle for one large crust.  bake 2 hours. 

top with whipped cream and raspberry sauce.

So here are the turkey leggs that I made for Nick's classroom party at thanksgiving. 

these are the good's inside and the best method for stuffing...  the tinfoil was a big help to keeping the leg shape together.  I used some leftover painter's paper from painting the basement... the paper was nice and thin (thinner then a lunch bag and it didn't have any of the lunch bag folds either.)  then a little white paper "bone embelishment" and some masking tape.

the kids loved them.  One little boy said "it's too cute, I don't even want to mess it up."  Needless to say they gobbled them right up. 

Now, can't believe it, but it's time for the "Most Wonderful Time of the Year" and here a few of my trimmings~

saw this idea on pinterest or somewhere, to use 2 stocking hangers on either side of the mantle and hang the stockings from curtain rod.  Brilliant!  got the stocking hangers for 2 for $5 and had an old rod.  (much more affordable then $10 a stocking hanger, especially where there's 6 of us.)

this all looks much better in person, but you get the idea.

Our Fall Break PlayDay... We left at noon today in hopes to do something fun outside.  This fall has been so nice and beautiful, so we decided to spend sometime in Logan Canyon at Tony's Grove.  We totally enjoyed ourselves outside hiking on the trails, throwing rocks and climbing hills. 

Not everyone is a fan of pictures... , (with the exception of Sadie the model superstar.)  It was a fun day together with lots of smiles!  That's the stuff Mom's love!

witches brooms








 Just a glimps of what I've been up to... it's Witches Night Out this Thursday here in the big town of "boo-ville" (a.k.a. Tree-town) and I've created a few gastly witches brooms.  They will be at Feather Your Nest if you are interested in riding one home!
