got dough?



Had an idea yesterday to take a friend a treat... and as a way for me to east less cookies... I made a batch of coconut chocolate chip cookies and split the batter in half, giving her a "ROLL OF DOUGH" and me only 2 dozen cookies to temp my very weak resistance.
chocolate chip coconut cookie's:
1 c. butter
1 c. brown sugar
1 c. sugar
2 tsp vanilla
2 eggs
1 1/2 c. flour
1-2 c. *oatmeal flour
3/4 tsp salt
3/4 tsp baking soda
8 oz. chocolate chips
1 c. coconut.
*blend oatmeal in food processor or blender until flour like consistancy.

nothing like a little tin-foil



my little "Pippy Longstockings" is growing up way too fast. I love the way that she is really getting into writing and expressing her creativity. Her "Valentine Purse" shows you just what I mean. I had the box and mentioned the purse idea... and the rest was Sadie's cute and creative spin. I guess I helped a little with the latch-handle part. She can hardly wait to take it to school.

trying something new


I saw this recipe on Katy Brown's Workshop on PBS and couldn't resist... I'll let you know how it goes or you can try it too...(this one's for you mom, I thought you might like this one...)


Crunchy Cucumber Salad
first:
marinate 3 hours or over night:
1 red onion sliced
1 c. sugar
1c. olive oil
1c. vinegar
drain onions and add to:
chopped cucumber (english style, remove seeds)
fresh dill
salt/pepper
drizzle of olive oil
drizzle of lemon juice (1/2 lemon)

3 down... 2 to go....

well that was fun!....
seriously... those were the easiest valentines I've ever made. thanks to family fun. I've got Sadie, Nick, and Mason taken care of... now what the heck for Andy and Jake? The man could care less about cards and crafts....and the baby needs something, he's teething... I wish I could find something teething-baby-friendly. Got any ideas?
oh... and thanks to my great little patient and tolerant baby train....(p.s. he does have other clothes....I just seem to choose to take pictures when he's wearing this all the time..)

misdiagnosis

So, Andy has been a little under the weather... serious nose, throat, cough, achy, fever, bla, bla, bla.... I was worried enough that I took him to the Dr. last Saturday to make sure the green-ness to the nose business wasn't an infection or something. The Dr. said it was just a virus, not much we can do about it. BUMMER... so we came home and tried to make the little guy comfortable, when suddenly I noticed something in his mouth....



He's pretty happy about too!!!
