our summer so far in a nutshell...

it may be horrible photography, but at least I caught a few moments. and now, lucky for me, if I don't remember to catch them, Sadie will. I'm lucky that I have a family that loves me as much as they do. They look past all my ridiculousness and craziness.

monster mellon and breakfast bars...



well.... he was suppose to be a shark... didn't do so good... so meet

MONSTER MELLON!!

p.s. after all that and no one would reach in his mouth for fruit... "people, it's not going to bite you..."


Just thought I would share this recipe. We had it for desert when it was warm, but chilled and cut into squares these breakfast bars are like a yummy bowl of fruity oatmeal.


Crust and Toppping:

1 c. flour

3/4 c. light brown sugar, firmly packed

1/2 tsp salt

1/2 c. cold butter cut into small cubes

2 1/2 c. quick cooking oats

2 Tbsp apple or orange juice (I didn't have either, and used milk instead)


Filling:

1/4 c. dark brown sugar firmly packed

2 Tbsp flour

pinch of salt

3 1/2 c. fresh berries (I used fresh peaches and cherries)

1 Tbsp fresh lemon juice.


1. heat oven to 375

2. add the flour, brown sugar, salt to bowl of food processor. pulse to combine. add butter and pulse until coarse crumbs form. add oats and pulse a few more times.

3. remove 1 1/2 c. mixture, set aside. add fruit juice to remaining mixture and pulse until moistened. press mixture into 9X13 greased pan.

4. for filling, whisk brown sugar, flour, salt in med. bowl. add fruit and lemon juice and gently toss. spread over crust.

5. sprinkle reserved crumbs over filling. bake until top is golden about 35-40 min. let the pan cool for 2 hours. cut into 16 bars. store in refrigerator in airtight container.

My Fourth of July Freedom Favorites

The Delta Parade: from the JET FLY-BY, to the kids collecting candy, to watching Grandpa (Our own WAR HERO) ride by!


" ...oh beautiful for Hero's proved, in liberating strife... who more than self their country loved and mercy more than life..."


Veitnam Vetrans were honored, and our Grandpa was one of them. We sat in the park and felt the real patriotism of what the 4th of July stands for.
I was so impressed at how well the kids behaved, they will never forget what they heard and how proud they felt to have Grandpa honored...

(...a few treats didn't hurt in keeping them quiet!)



... and then bring on the noise, and booms, and celebration!!!

I've never seen a better neighborhood fireworks display...

from neighborhood to neighborhood you could see the sky lit up in the most fantastic fire show ever!!!


and of course my #1 favorite freedom of all this weekend was the company I was with...
